Spelt is the ancestor of wheat, as it was formerly consumed by the Gauls and of which we find traces dating back eleven thousand years ago. It is a cereal that does not support any fertiliser supply, requires very little water and is very rich in nutrients. Rich in vitamins and minerals, white spelt flour produces a bread that does not crumble. Replace wheat flour advantageously because it contains less gluten and is used in the same way.
