The Lima organic balsamic vinegar, matured slowly in oak barrels during at least 5 years (3 years for most other vinegars) combines acidity and mildness so perfectly that one could consume it right out of a spoon. Its secret ? It is made of grapes from the Modena region in Italy, where the only authentic balsamic vinegar is produced, and it owes its dark brown colour and its very rich taste to a long maturing process. Thanks to the natural fermentation of this sweet grape variety, not a single colouring agent, sweetener or other additive such as caramel is needed. The Lima balsamic vinegar has no <best before> date. It can be kept 20 to 30 years in a bottle without losing any of its qualities, quite on the contrary.
