Umbelliferous seed of the anise family, produced in northern Europe. The aroma and flavour of caraway is pungent and slightly bitter. They add a lemony note to fruits and vegetables. Caraway is often confused with cumin.
Culinary: Recommended combinations: onion, garlic, cayenne, sauerkraut, cheeses, cucumber salads. Also used in cheeses, soups, gingerbread.
Liqueurs (kummel) - Stimulates appetite and promotes digestion in nervous people.
