
Goma-sio, from Japanese goma (sesame) and shio (salt) is a condiment to sprinkle on food.
Sesame seeds and salt are lightly roasted over a wood fire and then ground with a stone wheel.
Each salt particle is then coated with the oil of sesame seeds. This coating does not mask the flavour or the nutritional qualities of the sesame, but allows better assimilation of the salt by vegetating it.
