White sesame or tahini is shelled whole. This unique and original mechanical process does not use salt or chemical additives. Tahini retains practically all the nutritional qualities of whole sesame, apart from the silicon which is concentrated in the skin of the sesame. It is air dried and then ground with a grindstone.
It naturally contains more lecithin than whole sesame, which makes it easily emulsifiable even in cold water and makes its use very convenient in cooking.
Directions for use : sesame paste can be spread plain or with a little honey. It is mainly used in cooking as a replacement for crème fraîche.
Recipe idea: Cucumbers with white sesame
Cut two cucumbers into slices, and sprinkle with fine salt.
Add a tablespoon of tahini and mix. Let stand for at least 15 minutes.
After this resting time, mix again and add parsley.
